FSA 202 Food Service Cost Controls

A detailed study of how to set up and maintain cost control systems. The course focuses on important areas such as how to gather and use cost control information, profit planning, and the economics of the food service industry. Prerequisite(s): BUS 102  and BUS 105 .

Learning Outcomes
  1. Define and explain cost and sales terms.
  2. Demonstrate cost and sales as they related to volume cost benefit analysis.
  3. Describe food and beverage control aspects of purchasing, receiving, storing, issuing and sales.
  4. Analyze the monitoring of food and beverage operations on a daily and monthly application.
