NTR 218 Nutrition/Diet Therapy

This course is a study of nutrition as it relates to normal growth, development, health and disease conditions. The student will study how nutrient intake can impact body systems and processes. Therapeutic diets for specifics disease conditions will also be covered.

Learning Outcomes
  1. draw and explain the USDA Myplate,
  2. when given a sample of a poor daily food in-take, re-write the menu to conform to the USDA Myplate,,
  3. list the functions, sources, conditions of deficiencies and excesses for protein, carbohydrates, lipids, vitamins and minerals,
  4. perform a nutritional assessment on a diet history, compare intake to RDA/DRI values and USDA Myplate guidelines and make recommendations to improve nutrient intake,
  5. when given a specific disease condition, identify the general characteristics of the condition and describe the appropriate diet medical therapy,
  6. identify the foods allowed or not allowed for various therapeutic diets, and
  7. prepare a dietary treatment plan for a client/patient.
