FSA 203B Advanced Pastry/Bakery Skills

This course focuses on introducing advanced pastry and bakery techniques and methods. This advanced pastry and bakery course will consist of lecture, demonstration, and hands-on work by students. In each class session students will be introduced to a topic and have the opportunity to practice and refine their skill in production of desserts, pastries, and artisanal bread. Prerequisite(s): FSA 100  and FSA 103B . Approved uniform required.

Learning Outcomes
  1. Apply professionalism and food safety in pastry and bakery production.
  2. Demonstrate proper procedures for preparing advanced pastry and dessert components.
  3. Use and explain the difference in basic and enriched yeast breads, preferments, natural starters, and laminated doughs.
  4. Demonstrate assembly, decoration, and plating of dessert items meeting proper professional standards.
