FSA 203C Advanced Culinary Skills

This course focuses on introducing advanced culinary techniques and methods. This advanced culinary course will consist of lectures, demonstrations, and hands-on work by students. In each class session students will be introduced to a topic and have the opportunity to practice and refine their skills in production of American and international cuisines, advanced culinary presentation techniques, and fundamentals in garde manger. Prerequisite(s): FSA 100  and FSA 103C . Approved uniform required.

  1. Apply professionalism and food safety in food service production.
  2. Properly demonstrate American and international cooking techniques.
  3. Demonstrate advanced presentation techniques for food and plating.
  4. Prepare menu items that focus on garde manger cooking techniques, texture, flavors, and presentations.
